A territory in the province of Ferrara that includes the town of Voghiera, and parts of the towns of Masi Torello, Portomaggiore, Argenta and Ferrara. The unique qualities of the fertile clay loam rich land, and the typical climate of the area make Garlic of Voghiera P.D.O a unique product. Every year, an average of 100 quintals of dry garlic are cultivated here per hectare. The land on which this precious bulb is cultivated is rotated quinquennially (or rather, the garlic is sown on the same ground once every 5 years) in order to guarantee the highest quality of the product.
P.D.O CULTIVATION, from which the new plants are grown. The bulbs mature between June and July. Once harvested (bulbs are uprooted with the help of agricultural machinery), both bulbs and stems are dried and packed by hand, according to tradition.
CHARACTERISTICS Garlic of Voghiera P.D.O: A uniformly round bulb, slighlty flattened at the point from which the root emerges, made up of cloves grouped together in a compact form, with a characteristic curved exterior. The bulbs of the plant are generally a uniformly luminous white, occasionally striped with pink; it has a gentle flavour and a sweet and delicate taste. Its characteristic scent is owed to the presence of allicin, a powerful bactericide.
HEALTH BENEFITS Garlic is a health food, and a great ally to the human body. Raw garlic has antiseptic and cleansing qualities, thanks to the allicin that it contains, which acts against thousands of viruses and bacteria. It is also a powerful natural antibiotic and antioxidant: it strengthens our immune system and improves our cardiovascular function. It is excellent in combatting anaemia, controlling obesity, and cleansing the liver. It is very efficient against gastrointestinal disturbances, vomiting and diarrhea, and very useful in the case of infections and mycosis, as it has disinfectant properties.
USE IN THE KITCHEN The ideal place to store Garlic of Voghiera P.D.O is somewhere dry and well-ventilated. The individual cloves can also be frozen without losing any flavour or scent. Garlic of Voghiera P.D.O is a great ingredient: indeed, it is ideal for adding body and flavour to both traditional and innovative dishes. It can be used as individual cloves, or as a whole head, whilst to really make the most of its qualities, it can be chopped finely or ground in a pestle and mortar.
